Units I (almost) never build are:

Thank you!

P.S. Maybe because I play as perfectionist rarely having more than 8 cities, I build all. But very rarely Carriers and just one helicopter and some other units too.

1) Vet Frigates
Frigates (and ironclads if you haven't built LH) must be promoted to vet status through fighting. You sail along the coast and pick enemy units.
Advice #1: try to concentrate on triremes, caravels or ground units with defence 1 on grassland or plain if you can (with an attack of 4 you will probably win even against legions, but your frigate will turn red and take a long time to recover).
Advice #2: build Sun Tzu, if possible. All your frigates will become vet after ONE fight.
2) Chariots
I agree that archers and especially legions are very nice to have with you rather than against you when it gets hilly. But a horde of chariots can take ANY unwalled city on low defence terrain.

Sorry, forgot to tell you that I strongly agree with you about artillery.
Much can be done by vet artillery long before one ever dreams of howitzers.

I never build those Diplomat and Caravan units. Everytime I send them into battle they get slaughtered.

Glad to see some support for the beleagured Artillery unit! I used to have the 12-Diplo-and-Cavarly-a-day habit and finally kicked it one day due to late game "Religious Fanatics Revolting." Usually barbs are no problem, but one day all 30 of them appeared on a rail space. The Fanatics were no big deal but the Artillery were devasting! Like most folks, I don't garrison a lot of troops in cities away from front lines. A couple vet Alpines per city is usually it. Even large hordes of barb Cavalry could never do much against Alpines behind walls but just 3 or 4 Artillery blew them away. I lost two cities to barbs in the 1900's! Yikes!
