You are right. The plan is, to poprush a temple, after prebuilding 10 shields (2-3 turns). The result will be 1 unhappy citizen for 20 turns. Because the temple makes 1 unhappy citizen content, there's no bad effect from the poprushing.

For ethics purists: Poprushing is a clear benefit of Despotism. We need to use all benefits the games gives to strenghten our empire. Other than this and 4 units per city support Despotism has only disadvantages. And parasites (specialists) are uneffective, so why not whip a temple out of them? This world is cruel.

Considering the Greeks have just shown up on our radar, it is unlikely that we would be choosing them as a target just yet. Unless they did some really bad tactical/strategical mistakes in their planning. You never know, though.

I've run some numbers.

It appears that if we push it flat out (just about) in Apolyton, the attack force of 2 spear and 6 archers can be completed by about 1425 bc. This is based on Apolyton switching to 1 mined, shielded grassland and 2 forest when it hits 3 pop again after the settler.

Might be good to get a worker down to the 2 forest tiles after the 2 additional tiles for Red City are completed (mine and road).

Nope. Math. Poly can built an archer in 3 with 3 pop (1 working shielded grass, 2 on forest) and Red City should be able to build an archer in 5 if Poly lets it use the second shielded grassland (at 3 pop).
