Turning off Other People's Moves
I have found it incredibly annoying to watch every single movement from other civs and the turn time became unbearable,

I now play from turn to turn without seeing / waiting for others' moves - question: am I missing something big here? what are the major disadvantages? i mean i figure if someone is going to attack me, i'm going to know about it, right?

No, you won't. The first you will know is the turn you are actually attacked. Especially if they are using fast movers or you set up an ROP with them.
