How can I take control of enemy planet? Is destroying the only way? Please help!!!

No.

Send over a whole bunch of your own people. To do so, click on the "transport" button of a planet, then select the destination. When your people arrives, they will fight the locals. If you bring in sufficient troops, you will conquer the planet.

Number of troops you need is adjusted by relative tech levels and racial modifiers.

You can send troops from more than one planet and if you do not have enough to conquer and still fill the planet, send more as soon as you are able.
As UR said the combat will be a function of your tech and race traits. Bulrathi will be harder to beat and you will need much better tech or more troops than they have.
